Curry-Cajun Spiced Chicken

Mix together:
⅓ cup honey
3 Tablespoons water
3 Tablespoons prepared mustard
2 Tablespoons margarine or butter, melted (I use 1 Tablespoon olive oil)
¼ teaspoon Cajun seasoning (use more if you like it hotter)
2 teaspoons curry powder
1 teaspoon lemon juice
1 clove garlic, minced
Pour over:
6 skinless, boneless chicken breast halves (about 1½ lb.)
Serve with:
white or brown rice

Wash and pat dry the chicken breasts with paper towels.
Place a few spoonfuls of the sauce on the bottom of a 3 quart rectangular baking dish.
Arrange the chicken breasts in a single layer.
Pour the rest of the sauce over the top of the chicken.
Bake, uncovered, in a 350 degree oven about 30 minutes or until the chicken is tender and no longer pink.
Serve the chicken and pan drippings with hot cooked rice.
Makes 6 main-dish servings.
